I'm looking for an insurance policy for my mom who'd be visiting from India. I'm seeing some plans when I select the coverage as 'USA & during travel'. Can you confirm if all of they include protection during her travel as well or do I need to look at any particular plans?

Most of the plan provides coverage USA and during travel. Only some plan provides coverage only in US. There is no additional premium to cover travelling time. If you purchase comprehensive plan covers any medical problem during travel, lost luggage secondary to any benefits you get from airline, evacuation, flight accident etc.
