J1 visa insurance for UCF

I want to purchase one insurance plan for me and Mrs. I am a J-1 visa holder, a post-doctoral scholar at University of Central Florida. I will arrive at US at the earlier of September. My question is, after I purchase my insurance plan online using credit card, could I fill the "J exchange visitor insurance compliance form" for me and mail it to the address indicated, such that the university could aknowledge my insurance. This is the first time I come to america, so I have confuse on this, and hope this would not bother you.
