My wife and I live in Denver Colorado and spend the winter in Morelia Mexico. My wife is a Mexican citizen and has Mexican Medical Insurance. If she should get sick while we are living in Denver, are you able to MediEvac her to a hospital in Morelia ??

Medical evacuation plans evacuate to the the nearest facility where adequate care can be given, not to the place of your choice.
Therefore, if the person gets sick in Denver, you need to call 911 and get her admitted into the hospital into Denver. From insurance company's point of view, there is no point in evacuating her to Mexico.
